Il a inaugure la cuisine centrale d un nouveau genre. Zero plastique, chaine du froid au CO2 et autres progrès en matière environnementale. La confection des repas favorise le bio en partie et surtout les productions locales. Papillote et Compagnie est la première cuisine centrale de ce type en France.
